The principal cultivation are Olive trees, there are more than 800 of them. Besides the 230 century old plants, other varieties have been planted down through the years. There are 287 of the "Leccino" variety, 220 of the "Ogliarola" variety and 70 of the "Simone" variety.
The Leccino olive, offers a golden oil of excellent quality, not very aromatic with a light fresh taste.

Subtle hints of Almond mixed with Artichoke and Mint are to be tasted.
The Ogliarola variety is the most commonly cultivated olive tree in Puglia, particularly in the Brindisi area and dates back to the Roman era. The oil deriving from this plant, when freshly squeezed, releases a fruity flavour, it is both delicate and slightly spicy.

The Simone plant is traditionally less frequently cultivated in this region. It is characterized by a highly fruity taste with a hint of Tomato and freshly cut Grass.
