Harvest
The hand-picked olives are delivered within 24 hours to the oil mill where the pressing takes place. Modern Oil Presses are employed to extract oil in the age old traditional way. This tried and tested technique produces the lightest, most fragrant and irresistible of oils. In terms of quantity, as a result of the choice to produce an Oil of excellence, production stands at approximately 800 to 1.000 litres.

The organic choice
From its beginnings in 1997, the enterprise decided on the Organic route. To achieve this, an agronomist was hired, his advice, along with the support of "ICEA", a nationally acclaimed and renowned certification agency, enabled the setting up of a fully certified organic enterprise.
Since the Enterprise's beginnings, professional experts have been involved in the cultivation of the land. They have advised on the most suitable plants for the terrain in question and have followed the planting process. The ad hoc drip irrigation system has helped both the Arboreal and Horticultural plants to flourish.
