The breath-taking beauty of the Cisternino countryside, at roughly 350 mt above sea level and two Km from the Adriatic sea, gave rise to the formation of small sized business enterprise purely organic in nature. 800 olive trees some of which are over a century old, produce the finest oil. The thorough production process which is painstakingly followed at all stages, from the hand picking of the olives to their delivery to the oil mill and
finally to the bottling stage, guarantees oil of superior
quality, low in acid.
Besides the olive grove, there is a small but superior
quality Cherry, Almond and Pistachio production. Lastly
there are two hectares dedicated to the harvest of
one of Italy's finest quality Hard Wheat varieties, the
"Senatore Capelli".
